Shimano support colorway is either White on Blue or Blue on White. No yellow, seems wrong... ;(

I think the white vehicle with blue is current?

Yellow used Mavic Service bikes may have been a good purchase after all...

Good question. Maybe they'll buy some hubs from Mavic. ;-)

Do any teams still use rim brakes? That would mean at least 6 different types of rear wheels, and 2 types fo fronts? Do disc rotors line up that well?

Discs lining up great point/question.

I intentionally went all centerlock with the deluded impression my wheels would interchagably plug and play.

Even same size/model rotors not exact I learned.

My solution, using 6 bolt rotors, was to buy 3 sets of the same XT hubs at the same time and build 3 sets of wheels. Tolerances on different hubs were not close enough and rubbing/drag was a problem. I doubt that Shimano/Sram/Campy hubs are interchangable without tweaking which would be a major PITA for a pro race.

Also, I found that different rotors were different thickness which caused problems.

I've seen the exact same things with our disc-equipped bikes. In fact, later today I'll be installing some Syntace shims on a new pair of wheels I got for Linda's fat bike, as there's ~.040" difference in the position of the disc compared to her other wheels. That may not sound like a lot, but it's the difference between rubbing hard on the pads on one side and not rubbing at all.

Two teams ran rim brakes in 2020: Team Jumbo-Visma and Team Ineos. The latter is reported to be switching to discs in 2021, but knowing that team I wouldn't be surprised if they found a place to use rim brakes.

I use Syntace rotor shims, and on the two pairs of wheels that I use on my gravel bike - one 700c pair running 35mm road tyres, one 650b pair running 48mm gravel tyres - I shimmed the rotors so that I can swap the wheels without the pads rubbing.
