Cyclocross!
Round 3 of the world cup, at Koksijde in Belgium, was one of the best world cup races I've watched in a long time. Cold, wet, and very muddy, and the winner was in doubt until the last few metres of the race. I watched it on Eurosport, but I notice that the UCI has already put the full race coverage in HD on Youtube:

Those guys are fast, and make their bikes look really light when they have to carry them.

I think that's his world cup leader's outfit, so he's pretty much obliged to wear it.
Another really excellent European race I watched recently on Eurosport was the Ghent six-day, particularly the last hour of the last night - a madison with the leading teams quite often on the same points and the same lap.
Coverage of that is also available on cyclingfans.com.
